Smoked Chicken Recipe
December 30th, 2010Ingredients:
4, 4 oz. chicken breast halves, without skin
1 Tablespoon liquid smoke flavoring
Sauce:
8 fluid ounces tomato puree
3 drops hot pepper sauce
2 Tablespoons brown sugar
1 Tablespoon vinegar
1/8 teaspoon cloves, ground
1/8 teaspoon allspice, ground
1/8 teaspoon cinnamon, ground
1 Tablespoon onion, minced
1 Tablespoon canola oil
Garnishes:
3 green onion
1 medium tomato
4 ounces nonfat cheddar cheese, low sodium
1 tablespoon bacon bits
Preparation:
1. Marinate the chicken breasts coated with the liquid smoke flavoring for 1 hour. Grill the chicken over medium heat until juices run clear.
2. In small saucepan combine all the sauce ingredients and bring to a boil. Simmer for 15 minutes.
3. While chicken is grilling, chop the green onions and the tomatoes to a fine dice and grate the cheddar cheese.
4. To arrange, place the warm sauce in a squeezable bottle and decorate the plate, place the chicken in the center top with the chopped
vegetables & garnishes (tomato, green onions, cheese, and bacon bits).
